An excellent, very chocolatey, micro-lot from Daniel Ortega's Finca Buenos Aires. In his 2 hectare farm, he has 10,500 Caturra and Castillo trees. During harvest, his Caturra is picked every 3 weeks and the Castillo variety every 4, always in late afternoon when the sugar content of the cherries is highest

At the beneficio 'mill', coffee is de-pulped, then fermented wet for 18-24 hours, washed multiple times, then placed in a parabolic dryer. Here it is moved daily, remaining in the mechanical dryer for 10-18 days until the optimal moisture level is reached. Then it is ready for dry-milling to get rid of the dry parchment, and exporting in vacuum packs to us.
